~ FREE TIME WITH JESSIE ~
I don’t have a lot of time outside of PhD research, reading, and blogging, but I always make time to cook and to bake. I grew up in a family who loves food and preparing it. Seriously, every family gathering revolves around food so I’ve been cooking since I was old enough to stir. I’m pretty sure my family has an “I must feed people” gene and I must have inherited it from my Dad along with a killer fried chicken recipe.
The thing I love about cooking is that you can make adjustments to a recipe to fit your own tastes. I seriously adore tweaking a recipe until I can’t perfect it anymore. I think part of why I love perfecting recipes is that the scientist in me loves analyzing and experiment with everything.
Also, experimenting with recipes lets me cook by the seat of my pants. This last week I made chili and it was amazing! The only problem is that I can’t tell you exactly went into it because I was just throwing stuff in and never wrote it down.
I have certain foods that I make more than anything else. I haven’t found a salsa or carne asada recipe that I will not try. I have a soft spot for both of those foods and I try every variation I can even carne asada fries (see above picture). I have thirteen tried-and-true salsa recipes that I use on a regular basis. It ensures that I have a good recipe for whatever salsa mood I’m in. That doesn’t include all of the salsa recipes that I’ve collected to try.
My favorite thing is baking homemade bread. For me, it’s the ultimate stress reliever. There’s just something about hand kneading the heck out of some dough that makes me feel better about life. Plus, it’s delicious! So I figured I’d share one of my favorite bread recipes. I found this recipe over at the blog Our Best Bites, and it’s amazing!

Jen: What are you reading right now?
Jessie: I’m always reading multiple books at once so I’m currently reading The Well of Ascension by Brandon Sanderson, Winterspell by Claire Legrand, and Stay With Me by J. Lynn.
Jen: If you could only recommend two books to everyone, what would they be?
Jessie: TWO?!? Only two?!? How about three since I can’t think of just two? I’d recommend A Matter of Magic by Patricia C. Wrede, The Queen’s Thief series by Megan Whalen Turner, and Vicious by V.E. Schwab.
Jen: I know, I know, so mean! I really need to finish Vicious, now that you’ve recommended it! OK, if there’s one other thing you could do with your free time that you can’t yet, what would it be?
Jessie: Besides taking naps, right? I wish I had more time to go rock climbing and urban backpacking.
